İlay Türkmen is a researcher in Food and Nutritional Sciences at the University of Reading, specialising in dietary fibre, polyphenols and gut microbiome interactions. Her research investigates how fibre-bound plant compounds influence gut microbial activity and metabolic health using LC–MS analysis and in vitro fermentation models. Alongside her research, İlay has teaching experience as a Laboratory Demonstrator and Visiting Lecturer, with a strong interest in nutrition, functional foods and science communication.
İlay Türkmen’s research investigates the effects of fibre-bound phenolic acids on gut microbiota and metabolic activity. The study examines dietary fibres, including arabinoxylan, pectin and inulin, to understand how fibre-associated plant compounds influence gut health. Using alkali hydrolysis and LC–MS analysis, fibre-bound phenolic compounds are characterised and quantified. Selected fibres are then assessed using in vitro batch culture fermentation models to evaluate changes in phenolic acid release, short-chain fatty acid production, and microbiota composition over time. The research aims to improve understanding of dietary fibre functionality and microbiome modulation.
