报告人及内容简介:

Holly Giles focuses on textural modification of protein beverages to increase consumer acceptance and the use of high-protein foods as a preventative measure against sarcopenia. During her PhD, she has published work in highly regarded journals, delivered lectures internationally and won awards at international conferences. Her background includes a first-class Biomedical Science degree from Cardiff University and an MRes in Musculoskeletal Ageing at the University of Liverpool at distinction level. She is a qualified Associate Nutritionist and passionate science communicator.

High-protein drinks are commonly prescribed to older adults (65+) as a means to increase their protein intake, reducing the risk of sarcopenia. However, these drinks are associated with negative sensory characteristics, leading to consumer rejection. Holly’s report will focus on the use of additional lubrication, using polysaccharides, to modify the mouthfeel of these beverages and the sensory practices commonly used in these studies. Holly will report her key findings, which have been recently published in Food Hydrocolloids and Food Quality and Preference, and provide information on sensory methodologies used at the University of Reading including descriptive and sequential profiling.

报告人及内容简介:

Lucas Rodrigues de Mello is a postdoctoral research associate at the University of Reading with an MSc and PhD in Molecular Biology, focusing on biotechnology and development of gene carriers using bioactive peptides.

Lucas will give a brief introduction regarding gene edition and how those techniques may be applied to the food industry, with some practical examples of genetic modified organisms (GMOs) previously developed in academia and industry.
