Dr Resty Tocmo is an assistant professor at the University of Reading, UK. He has over 10 years of research experience in functional foods and natural products through his current position, PhD studies (National University of Singapore), and postdoctoral work (University of Wisconsin-Madison and University of Illinois at Chicago). Prior to joining the University of Reading, he was a Marie-Curie Fellow in Immunology at Dublin City University where he investigated the immunomodulatory effects of dairy- and plant protein-based ingredients. He is currently principal investigator (PI) of a British Council International Science Partnership Fund project that aims to valorize byproducts from virgin coconut oil industry into alternative protein ingredients. He is also PI of a Royal Society research project that aims to investigate redox-mediated modulatory effects of conjugated and nitro-conjugated fatty acids on T cell differentiation and function. Dr. Tocmo is Section Editor for the European Journal of Nutrition. His research group includes PhD students and undergraduate researchers and investigates the digestion profiles of plant proteins and the interrelations among various factors - protein quantity, processing, nutritional profiles, digestion behaviour, allergenicity, and bioactive properties - to understand how dietary proteins contribute to promoting gut health. The medium- and long-term goal of his research is to understand how diet modulates immune responses focusing on intestinal mucosal immune responses and design dietary interventions to manage or prevent immune-related gut diseases.

Dr. Kumari M. Rathnayake is a Senior Lecturer in Nutrition at Wayamba University of Sri Lanka, with over 18 years of academic experience. She holds a B.Sc. in Nutrition (First Class), an M.Phil. from the University of Peradeniya, and a PhD in Human Nutrition from the University of Reading, UK, supported by a Commonwealth Scholarship. A registered nutritionist, she has collaborated with UN agencies and Sri Lanka’s Ministry of Health. Her research focuses on public health nutrition, cardiometabolic risk, nutrient-gene interactions, and chrono-nutrition, including the impact of dietary fats and time-restricted eating on metabolic health. Currently, she serves as Vice-President of the Nutrition Society of Sri Lanka.
Chrono-nutrition is the study of how the timing of food intake influences health, particularly through its impact on metabolic processes. It is based on the understanding that the body’s internal biological clock, responsible for regulating numerous physiological functions, significantly affects how food is metabolized. This field explores how synchronizing eating habits with the body’s natural circadian rhythms can enhance metabolic health, support weight management, and lower the risk of chronic conditions such as obesity, type 2 diabetes, and cardiovascular diseases. Circadian rhythms play a vital role in regulating physiological and behavioral functions in humans. A growing body of observational research has demonstrated a strong link between circadian misalignment and the development of cardiometabolic disorders.
